This chapter is all about the legend of George Hunter, who is the "legendary eater" of Japanese food. The narrator tells us that this is the first time he's ever seen someone eat up all the noodles in such a clean and simple manner. He's so impressed that he wants to eat all of the food. He wants to know why he knows so much about George Hunter. First of all, he tells us, this place owes so much to George Hunter that it's worth wiping the picture off the wall. Second, he says, it was his father's restaurant that George Hunter used to frequent when he was a customer. Third, the food was so good that George and his father both gave their approval to it too. After that, the place picked up a lot of business.
