He says that Mika's first day at work is tomorrow, so he wants her to send the girl to his table, but he'll have to wait until the next day for her to arrive. He then tells her to put her eyes back in her mouth if she isn't satisfied with the hostess's service, because she'll lose her job if she fails to be satisfied. Hostesses should always be kind to each other, he says, because they'll all be fired if they don't deliver on their promises.
